Crockpot-Orange Glazed Chicken Meatballs
Sweet & salty! Reminds me of orange chicken from a Chinese food restaurant. I ate my meatballs over brown rice and a side of steamed broccoli. It really hit the spot!
Ingredients
1 lb Ground Chicken
1/2 cup Quick Oats
1 Egg
1 tsp Basil
1 tsp Parsley
1 tsp Garlic Powder
1 Tbsp Dried Onion
Salt & Pepper to taste
1/2 cup No Sugar Added Orange Marmalade (I purchased Smucker’s Brand)
1/4 cup Liquid Aminos (Tastes just like soy sauce)
2 Tbsp Stevia – Powder
1/4 cup Water
Juice of an Orange
Instructions
Combine ground chicken, oats, egg, & seasonings in a large bowl. Mix well. Use your hands, get dirty! Once combined, roll them into 1″ balls and place into the crockpot.
Place the meatballs in the bottom of the crockpot, close enough together so you can pour sauce over them and cover them completely.
In a separate bowl, combine orange marmalade, liquid aminos, stevia & water into a medium bowl. Whisk together & then pour over the meatballs in the crockpot. Slice an orange in half and squeeze the juice directly onto the meatballs, you can add orange zest if you want too!
Cook on high for 4-5 hours
Serve over rice with a vegetable, or as an appetizer! 4 balls = 1 serving, makes about 4 servings.
