Orange BBQ Stir Fry
Ingredients
4 cups frozen stir fry vegetables
90 second brown rice pack
Sauce:
2 Tbsp liquid aminos
1 jar orange preserves
¾ cup sweet baby ray’s bbq sauce
2 Tbsp rice vinegar
1 Tbsp stevia
Meatballs:
1lb lean ground turkey
Panko breadcrumbs
1 Tbsp garlic powder
1 egg
Salt
Pepper
Instructions
Preheat oven to 350 degrees
For the veggies, place in a big wok or pan that you can cover. Drizzle with olive oil and add all the vegetables to it. Steam, covered on medium-high heat until cooked to your liking
For the meatballs, mix all ingredients (add as much breadcrumbs as needed so the mixture is easy to form into meatballs), roll into 1-2” balls and add to a greased baking sheet
Bake at 350 for 25-30 minutes (rotating halfway through)
For the sauce, mix all ingredients in a small pan on low heat and simmer
When ready to serve, I drizzled sauce over vegetable/meatball/rice mix instead of mixing it all together. Makes 4 servings, serve over rice.
