Ricotta, Bacon & Spinach Stuffed Mini Peppers

Looking for a new idea to sweeten up football season? Try these! They are a great finger food that everyone is sure to love.

Ingredients
6 Slices of Turkey bacon – Chopped
3/4 cup Low Fat Ricotta Cheese
1/3 cup Grated Parmesan Cheese
1/2 cup Spinach – Chopped
24-30 Mini Sweet Peppers (Depends on how large they are)

Instructions
Preheat oven to 350. Cover a baking sheet with aluminum foil and spray with cooking spray. Set aside.

Put turkey bacon in a microwavable safe dish and cover. Cook on high for 8-10 minutes depending on bacon “wellness” you desire. I like my bacon crisp!

Add ricotta, parmesan cheese, & chopped spinach to a bowl and mix.

While your bacon is cooking, start preparing your peppers. Wash peppers and cut peppers. Cut the top off including the stem and scrape out the seeds.

Once bacon is done cooking, let cool. Chop and add into the mix. Blend well.

Use your hands or a spoon to stuff the peppers with mixture.

Bake at 350 for 20 minutes. Allow to cool & enjoy!
