Breakfast Burritos

These are easy to make and freezable to use later! Recipe makes about 10 burritos so you can freeze some for later use!

Ingredients
10 Whole Grain Tortillas
4 Chicken Sausages (I used Trader Joe’s brand)
1 1/2 Cup Liquid Egg Whites
1/2 cup Reduced Fat Feta Cheese
1 1/2 Cups Frozen Spinach – Chopped
1/2 White Onion – Chopped
Pepper to Taste

Instructions
Remove casing from sausage if present. Cut up sausage and brown in a pan.

Spray another pan (that will be large enough for all the ending ingredients). Add your eggs to the pan along with frozen spinach and onion, season with pepper.

Scramble the eggs making sure they don’t stick to the pan.

When the eggs are almost done, add in the feta and mix.

Add the browned sausage and mix. Allow the mixture to cool.

Measure out mixture with a 1/3-1/4 cup measuring cup into your tortillas. I laid out 1 tortilla at a time on top of plastic wrap, topped with the mixture, and rolled into the plastic for storage.

You can store the individually wrapped burritos in a freezer bag and freeze!

When you’re ready to eat, remove the burrito from the plastic wrap and microwave until defrosted and heated all the way through.

Of course, I always top mine with a ton of hot sauce!
